About Our Wines

2007 marks the winery’s first release of our 2004 wines.
The varieties:
Cabernet Sauvignon
–75% Champoux cabernet sauvignon grapes combined with Chandler reach and with a touch of merlot grapes from Portteus vineyards merge together creating an aromatic bouquet of exuberantly rich flavors, hints of dry cherry and dark chocolate with lasting extended flavors. Patience is rewarded for those who allow breathing time, and even more for cellaring.
Complements well with; rustic breads and bold flavorful cheese, steak or lamb, chocolate mouse’ or a dense rich dessert.
Syrah – Opens with abundant fruit combined with subtle citrus, lingering into a sweet chocolate mandarin finish. By creatively combining 2 different merlots and a tiny bit of cab, this wine extends and pleases. - SOLD OUT
Balance flavors with – pears and goat cheese, pheasant, rabbit, duck, or fruits and crème.
Merlot
– An earthy natural beginning, transitions into intense berries off the vine fruitiness and ends in a balanced smooth silky tannic finish.
Pairs well with – light crackers with smooth cheeses such as, brie or crème la freche, simple grilled red meats or almond torte, vanilla cake or pastry. - SOLD OUT

2005 Cabernet Sauvignon – Lovely ruby red color with fragrances of ripe red berries with under notes of wild honey that awakens the palate. Opens with dark quenching cherry flavors mixed with soft exotic touches of spice that ends long and bright.
Couple flavors with; light crackers and smooth cheeses such as brie or triple crème’, pasta with garlic white sauce, quail, or Cornish game hen, mixed garden greens, finish with a light Crème Brulee’, or pecan caramel ice cream.
2005 Syrah – This syrah is mixed with two different syrah grapes and a touch of cabernet. Purple juice coloring with scents of Italian plums and blackberry and a dynamic citrus background. Begins with juicy ripe fruit carrying a spicy rustic edge and a long earthy finish.
Balance flavors with; fruits with cheese and bread, roasted fowl, or grilled salmon, wild mushrooms followed by a cool sorbet or tiramisu.
2005 Sangiovese – Super Tuscan styled after the original Chianti’s with out the added tannin. Opens with intense spice laced with black current with a hint of huckleberry. A slow start finishes long, demonstrating the subtle complexity of the grape.
Share flavors with; Spanish tapes’, white sauces or a hearty pork or veal marinara ,biscotti, fruits and rich cheeses.
